Carrot Cake Banana Bread
Serves: 4
Ingredients
- 1½ bananas, mashed
- 2 eggs
- ½ cup grated carrot
- 1 tbsp olive oil
- ½ tsp cinnamon
- 1 cup Spotty Baking Date-Sweetened Banana Bread Mix
- ¼ cup walnuts, roughly chopped
Cream Cheese Frosting
- ½ tub (125g) light cream cheese
- 2 tbsp thick Greek yoghurt
- 1 tsp maple syrup
- Crushed walnuts, to finish
Method
- Preheat the oven to 180°C. Lightly grease a small rectangular baking dish
(around 18cm x 12cm). - Mash the banana directly in the dish. Add the eggs, grated carrot, olive oil and cinnamon, then whisk until well combined.
- Stir in the Spotty Baking Banana Bread mix and chopped walnuts until just combined.
- Bake for 20–25 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool completely in the dish.
- Meanwhile, in a small bowl, whisk together the cream cheese, Greek yoghurt and maple syrup until smooth.
- Spread the frosting over the cooled banana bread and scatter with crushed walnuts.
- Serve immediately, or store covered in the fridge.
