Sticky Date Banana Bread Donuts by @livs.table

Sticky Date Banana Bread Donuts

Makes: 12 donuts


Ingredients

2 ripe bananas, mashed

2 eggs

2 tbsp olive oil (or melted coconut oil)

1 ½ cups Spotty Baking Banana Bread Mix

4 Medjool dates, finely chopped


Sticky Date Glaze

8 Medjool dates, pitted

½ cup boiling water (plus extra if needed)

2 tbsp coconut oil

2 tbsp almond milk (can use more water)

Chopped roasted walnuts, to serve


Method

  1. Preheat your oven to 180°C and lightly grease a donut tray (or muffin tin).
  2. Place all of the dates in a bowl and cover with boiling water. Set aside for 10 minutes to soften.
  3. In a bowl, mash the bananas until smooth. Add the eggs and olive oil, then whisk until well combined. Add the banana bread mix and stir until just combined, then fold through the chopped dates.
  4. Transfer the batter to a piping bag (or ziplock bag) and pipe into the donut moulds.
  5. Bake for 12–15 minutes, or until golden and cooked through.
    (If using a muffin tin, bake for 18–22 minutes). Allow to cool slightly before transferring to a wire rack.
  6. For the sticky date glaze, blend the soaked dates with ½ cup of the soaking water, coconut oil and almond milk until smooth. Add more water if needed to reach a pourable consistency.
  7. Dip each donut upside down into the glaze, and smooth with the back of a spoon. Sprinkle with the chopped walnuts to finish and serve. Otherwise, store in an air-tight container in the fridge and enjoy slightly warmed up.
