Recipe for Tiramisu Pancakes by Olivia Leung - featuring our Spotty Avocado Pancake Mix 😋🥑

Tiramisu Pancake Stack

Serves: 2


Ingredients

Pancakes:

2 eggs

½ large avocado, mashed

3 tbsp milk

1 shot espresso (cooled slightly)

1½ cups Spotty Baking Choc Avocado Pancake Mix


Layers:

160g thick vanilla yoghurt

Chocolate nut butter (hazelnut spread would also work great here)

1 tsp cocoa powder


Method

  1. In a medium bowl, whisk together the eggs, mashed avocado and milk until smooth.
  2. Add the Spotty Baking pancake mix and stir until fully combined. Pour in the espresso and whisk briefly until the batter is smooth (*see note).
  3. Heat a large non-stick pan over medium heat. Spoon ¼ cup of batter into the pan for each pancake.
  4. Cook for 2–3 minutes, or until bubbles form on the surface. Flip and cook for a further 30–60 seconds, until cooked through.
  5. Repeat with the remaining batter, keeping pancakes warm by covering with a clean tea towel.
  6. To assemble, place one pancake on a plate and spread with a layer of nut butter and vanilla yoghurt. Repeat until you have a stack of three pancakes.
  7. Finish with a generous spoonful of yoghurt and a light dusting of cocoa powder, and serve immediately.

*Note: the consistency may vary depending on the size of your avocado. If the batter looks a bit too thick, add another tablespoon or two of milk to thin it out.
