Recipe for Tiramisu Pancakes by Olivia Leung - featuring our Spotty Avocado Pancake Mix 😋🥑
Tiramisu Pancake Stack
Serves: 2
Ingredients
Pancakes:
2 eggs
½ large avocado, mashed
3 tbsp milk
1 shot espresso (cooled slightly)
1½ cups Spotty Baking Choc Avocado Pancake Mix
Layers:
160g thick vanilla yoghurt
Chocolate nut butter (hazelnut spread would also work great here)
1 tsp cocoa powder
Method
- In a medium bowl, whisk together the eggs, mashed avocado and milk until smooth.
- Add the Spotty Baking pancake mix and stir until fully combined. Pour in the espresso and whisk briefly until the batter is smooth (*see note).
- Heat a large non-stick pan over medium heat. Spoon ¼ cup of batter into the pan for each pancake.
- Cook for 2–3 minutes, or until bubbles form on the surface. Flip and cook for a further 30–60 seconds, until cooked through.
- Repeat with the remaining batter, keeping pancakes warm by covering with a clean tea towel.
- To assemble, place one pancake on a plate and spread with a layer of nut butter and vanilla yoghurt. Repeat until you have a stack of three pancakes.
- Finish with a generous spoonful of yoghurt and a light dusting of cocoa powder, and serve immediately.
*Note: the consistency may vary depending on the size of your avocado. If the batter looks a bit too thick, add another tablespoon or two of milk to thin it out.
