15-Minute Air Fryer Banana Muffins
You've met our 100% date-sweetened Banana Bread Mix, and maybe you've tried making Banana Muffins out of the same mix, but did you know that you can make them in the air fryer for an extra speedy bake?
Whether it's a busy morning and you need a quick lunchbox treat or breakfast, or a guilt-free sweet treat after dinner, these little muffins are the perfect remedy to satisfy a hungry tummy or a sweet tooth - all while helping you use up your spotty bananas and reaching your gut health goals!
Pick a silicone muffin pan that suits your air-fryer size, but we used this Wiltshire Australia one (also available at Big W and Spotlight).
Makes 4 muffins
Ingredients:
1 Large Spotty Banana
3/4 Cup Spotty Banana Bread Mix
1/4 Cup Olive Oil
1 Large Egg
Method:
1. Preheat your air fryer to 180ºC
2. Peel and mash your spotty bananas, and add in your Spotty Banana Bread mix
3. Add in your oil and egg, and stir until it combines into a batter (we know the golden rule is wet into dry, but we're lazy and want to only wash one measuring cup!)
4. Spoon your batter into a silicone air fryer muffin pan until just over 3/4 full to give it room to rise, and air fry for 15-18 minutes for each batch until risen and golden brown
5. Remove from the silicone pan and place on a rack to cool before enjoying
