Another Spotty Baking X Liv's Table creation - this time featuring our Date 'Sugar' in a recipe for chicken tenders 🤭

RECIPE

Chicken Tender Ingredients:
1 small pack (around 500g) chicken tenderloins
1/2 cup plain flour
2 eggs
1 cup panko breadcrumbs
1/2 tsp Chinese five spice (optional)
Salt and pepper, to season
Olive oil spray

Sweet Sticky Sauce:
1/4 cup oyster sauce
2 tbsp sweet chilli sauce
1 tsp rice wine vinegar
2 tbsp date powder
1 tbsp soy sauce
1 tsp crushed garlic

Optional: extra 1-2 tbsp water for thinning if needed

To Serve:
Sliced spring onions
Sesame seeds
Fresh chilli, finely sliced

Method:

  1. Preheat your air-fryer (or oven) to 180 °C.
  2. Place the flour, eggs and breadcrumbs (with the Chinese five spice if using) all in separate bowls.
  3. Coat each of the chicken pieces in the flour, egg and panko breadcrumbs.
  4. Place the chicken in the air-fryer basket, spray generously with olive oil, and cook for 10-12 minutes, flipping halfway, until golden and cooked through.
  5. Meanwhile, add all the sauce ingredients to a small saucepan. Bring to a gentle simmer over medium heat and cook for 3-5 minutes, stirring occasionally, until thickened slightly.
  6. Transfer the chicken to a plate, season well with salt, and pour over the hot sticky sauce.
  7. Top with the sliced spring onions, sesame seeds and fresh chilli and serve immediately.
