Another Spotty Baking X Liv's Table creation - this time featuring our Date 'Sugar' in a recipe for chicken tenders 🤭
RECIPE
Chicken Tender Ingredients:
1 small pack (around 500g) chicken tenderloins
1/2 cup plain flour
2 eggs
1 cup panko breadcrumbs
1/2 tsp Chinese five spice (optional)
Salt and pepper, to season
Olive oil spray
Sweet Sticky Sauce:
1/4 cup oyster sauce
2 tbsp sweet chilli sauce
1 tsp rice wine vinegar
2 tbsp date powder
1 tbsp soy sauce
1 tsp crushed garlic
Optional: extra 1-2 tbsp water for thinning if needed
To Serve:
Sliced spring onions
Sesame seeds
Fresh chilli, finely sliced
Method:
- Preheat your air-fryer (or oven) to 180 °C.
- Place the flour, eggs and breadcrumbs (with the Chinese five spice if using) all in separate bowls.
- Coat each of the chicken pieces in the flour, egg and panko breadcrumbs.
- Place the chicken in the air-fryer basket, spray generously with olive oil, and cook for 10-12 minutes, flipping halfway, until golden and cooked through.
- Meanwhile, add all the sauce ingredients to a small saucepan. Bring to a gentle simmer over medium heat and cook for 3-5 minutes, stirring occasionally, until thickened slightly.
- Transfer the chicken to a plate, season well with salt, and pour over the hot sticky sauce.
- Top with the sliced spring onions, sesame seeds and fresh chilli and serve immediately.
