Spotty Baking x Livs Table
Chocolate Pistachio Cookies featuring our 200g Date Sugar
Makes: 8 cookies
Ingredients
- ¼ cup Spotty Baking date sugar
- ⅓ cup coconut oil, melted
- 2 eggs
- 2 tbsp maple syrup
- 2 tbsp almond milk
- 1 ¼ cup plain flour
- 1 tsp chia seeds
- 2 tbsp cacao powder
- 1 ½ tsp baking powder
- ¼ tsp salt
- ¼ cup pistachios, chopped
- ¼ cup dark chocolate, chopped
For topping
- 2 tbsp pistachio spread, melted
- 2 tsp chopped pistachios
Method
1. Preheat your oven to 180°C and line a tray with baking paper.
2. In a large bowl, whisk together the date powder, eggs, melted coconut oil, almond milk, and maple syrup until smooth.
3. Add the flour, chia seeds, cacao powder, baking powder and salt. Stir until just combined.
4. Fold through the chopped pistachios and dark chocolate.
5. With slightly wet hands, take a heaped tablespoon of the cookie dough and roll into a rough ball. Place on the prepared tray and flatten with your palm or the back of a spoon until about 1 cm thick.
6. Bake for 12–15 minutes, or until lightly golden around the edges. Cool on a wire rack.
7. Drizzle with melted pistachio spread and sprinkle with extra pistachios.
