Rice Paper Apple Pies - another delicious recipe by @livs.table featuring our Date ‘Sugar’ 🤭
RECIPE | Makes 8
Ingredients
2 large apples, diced into small chunks
1 tsp cinnamon
3 tbsp @spotty.baking date powder
1 cup water
8-10 rice paper sheets
1/2 cup walnuts, roughly chopped
1 egg, beaten
Icing sugar, to serve
Ice cream or yogurt, to serve
Method
1. Add the apples, cinnamon, date powder and water to a small saucepan. Bring to a gentle simmer over medium heat and cook for 8-10 minutes, stirring occasionally, until the apples are soft and the liquid has reduced. Set aside to cool slightly.
2. Lightly wet a rice paper sheet on both sides and place it onto a clean surface. Spoon a little of the apples mixture onto the lower third, sprinkle with chopped walnuts, and fold the bottom edge up over the filling. Fold in the sides, then roll up to seal. Repeat with remaining rice paper sheets.
3. Brush each roll lightly with the beaten egg and place in the air fryer (or oven). Air fry at 200°C for 8-9 minutes, or until golden and crisp 🤤
4. Dust with icing sugar and an extra pinch of cinnamon, then serve warm with some ife cream or yogurt.
